I'm on a roll with this sausage making. Maybe I should reconsider changing this here blog to the Sausagewave, as there is no end in sight. If you'll indulge me once again for another venture into the land of sausage, I'll tell you a tale of two sausages you probably already know quite well, and if you don't, please let me introduce Mr. and Mrs. Sweet and Hot Italian Sausage.

I was bad to my blog last week, but I hope you'll trust me when I tell you that the reason why rightfully outweighed my responsibilities to this site. Now, with the other done, I can get back to business as usual, and last weekend I was in the business of smoking some seriously delicious pork butts. Fire up your smokers, because your about to take a journey through hog heaven, and there's a pulled pork sandwich with your name on it waiting for you at the other end.

I'm not trying to make you feel bad for not being there, but this year's Carne-val was the Meatwave of all Meatwaves. I don't think we've ever had such a great diversity of meaty flavors as we had this past weekend, each one exquisite in its own right. Ok, so maybe I want you to be a little jealous, but it's out of love. I just wish I could share the wonders of Carne-val with everyone, since it ended up being a true celebration of all things meat!

The Meatwave achieves its goal of spreading the meat well, but it's often difficult to get people into the actual process of grilling. I'm always looking for ways of getting people up out of their chairs and to the grill side, actively involved in making their own food. A lot of what I cook is not well suited for this task, so I'm often my own worst enemy in enhancing the Meatwavers cooking experience, but I made up for this by having a party revolving around what must be the most interactive of grilling activities, pizza making.

I'm pleased for you to meet Marissa in our second installment of "Meat a Meatwaver." Like Mike, Marissa is another true die hard Meatwaver and is quickly becoming our resident mixologist, providing delicious beverages to compliment each week's meat.
