Kabob Crazy! Pork and Mango Skewers

Pork and Mango Kabobs

The kabob craziness continues, with the second installment featuring pork and mango skewers. This recipe featured a lot of firsts at the Meatwave; the first dry rubbed kabob, the first grilled mangoes, and the first grilled green onions. In the spirit of always wanting to find something new to throw on the grill, these kabobs really captured my attention when I cozied up with one of many pieces of grilling literature on a rainy evening not far back.

Kabob Crazy! Asian Beef Skewers

Asian Beef Skewers

Have I mentioned before how much I love kabobs? If I haven't, let me take a second to profess the deepest affection that I have for these sticks of meat. Kabobs done right are just about everything I want out of a grilled food: they're loaded with flavor; they grill fast; they maximize the surface area of the food, which creates more opportunity for wonderful caramelization over the high heat; and they seem to get everyone crowded around the grill, cooking their own food like nothing else can. I realized for all the kabobs I've made, I have not done them justice on the blog, so we're about to go all kabob crazy up in here, coming at you with one kabob recipe after another. First up is an Asian beef skewer, which might not actually be a true kabob, but it's been a mainstay in my repertoire year after year, continually being a Meatwaver favorite, so that makes it number one on my list to share out to the masses.

Track Meat

Track Meat

Meatwave premises are always loose. We sit around and ramble off hilarious meat puns that later form into full fledged Meatwaves, but we hardly ever stick to the theme. This past weekend was the Track Meat, where everyone was supposed to bring a favorite song or two that's ideal to eat meat to. This idea was brilliantly thought up by my Aunt Debby (I guess meat puns run in the family), and I was hoping that this one would actually get everyone actively involved in building the ultimate meat-eating-mix-tape. It came as no surprise that no one brought a song (I'm guilty of not participating as well), but with four different kabobs, some homemade pita, and a mango sorbet, this Track Meat was so delicious I wouldn't even have found time to stop eating and compile our playlist anyway (but if you have good ideas for meat eating songs now, please leave them in the comments).

Who's Your Baba?

For all the work I put into my meat creations, I have very little to show in terms of sides. It seems week after week I pour all of my attention and energy into outdoing myself with a main course, but I'm very bad at rounding out the meal with a nice accompaniment, usually just throwing some corn or veggies on the grill. I feel like this is such a cop-out and I'm not doing justice to my meal, my guests, or myself. It's about time I devote more time to creating a well rounded meal (not in the health-wise sense), and I started this personal quest with a bowl of Baba Ghannouj.

A food that is such a staple in our American diet should be something we should all be able to master, but you're not going to get anywhere without the right piece of beef.
