Sadness in the the City of Lost Chiles

For all the reasons I love living in NYC, there's times when it can be a total disappointment. I've been vocal about the sorry state of Southwest and Tex-Mex cuisine here, which happens to be up there next to barbecue as my favorite. Although barbecue has be righted to some extent in the past 5 or so years, my other true food love continues to get little to no respect. So I'm left to my own devices to pick-up the slack, but the city doesn't make it easy with inferior or non-existent ingredients that are required to replicate the real deal. One of these large holes is Hatch chiles—one seriously awesome pepper.

The Meatwave is 7 years in now, and during this time I've learned an important thing, ladies love the meat. Now I'd like to think my chiseled good looks (yeah, right) bring them in, but faced with the reality of the situation, I know they're coming for one thing and one thing only, lots o' meat! So this past weekend's Meatwave was dedicated to all the meat-loving ladies out there, with a menu devised and mostly prepared by the one that I'm honored to call my wife, and with that came a food that's fairly uncommon around these parts, fish!

The Gyrating Properties of Meat

Shame on me, back in the winter my wife most lovingly gave me the gift of endless rotating meats with the Weber rotisserie attachment, and up until now, all of my exploits with my favorite grilling accessory have been shared with my fellow Serious Eaters, leaving my meaty minions here in the dark. That comes to an end today with one of the most ubiquitous of revolving meats—gyros. While my past adventures with the rotisserie have focused mainly on duplicating one of my favorite chickens, this gyro represents new ground for the Meatwave, so get excited as I bring you into the tasty, tasty land of the lamb gyro loaf.
