Meat Tips: A Meat for Every Kabob

Carne-val

A kabob is only as good as the meat you put into it, and I've found kabobs are pretty particular with the meats they like. So I have another addition of Meat Tips, and a continuation of the kabob craziness, to help make sure you're buying the right meat to ensure skewer success.

Another Year, Another Sausage

Thai Chicken Sausage

Being a creature of habit, I was comforted when an email arrived announcing that the Dr. Popsicle birthday would be returning for another year of bbq in Prospect Park. This event not only signifies the turning of age of its radical host, but also the one year anniversary of my first foray into sausage making. It seemed only fitting for me to take out the grinder and have another go, in the name of tradition and the good Dr.

Chipotle Lime Chicken

Chipotle Lime Chicken

I'm so over boneless skinless chicken breasts. There was a time where I could not survive without them, but unless I'm frying them to make schnitzel, they no longer have any place in my diet. They represent a lifeless lazy food to me and their convenience does not out weigh the often dry, tasteless meals they produce. That being said, last week I played the role of total hypocrite by reverting to my old ways in the name of saving time for weeknight grilling, but the end results were pleasant enough that I feel confident in passing them along to you.

The Forgotten Chicken

A Filimeato Feast

I'm heading down to Houston for a quick visit to celebrate Kristin's Mom's birthday. Houston always means non-stop delicious Filipino food, as her Mom tends to feed us constantly. Lost in my thoughts of the tocino, empanadas, and adobo that are sure to grace my plate in the next few days, I remembered a remnant of the Filimeato Feast that never seemed to make it to the blog. Call it laziness or lack of time (I'm sticking with the later), but my intended post about Chicken Inasal was never written. This by no means is a reflection on the status of the dish, and it's about time I give another piece of Filipino cuisine the time in the spotlight it deserves.

A Trip Back to the Islands

A Filimeato Feast

What was I thinking when I attempted to make Filipino BBQ last week from a cookbook? Why would I ever do that when I have direct connections to family from the Philippines that could have warned me what I was doing was wrong? I don't really know why I chose to do things the way I did, but I made sure to correct the problem before the grand Filimeato Feast. I went straight to the source for a recipe, provided by the bbq maker in the gf's family, and the end result was everything I ever wanted.
